Believe me when I tell you that you can have a delicious and nutritious lunch in just 20 minutes! This one is packed with all the goodness your body needs when days are getting shorter and colder. It doesn’t mean your plate have to be sad and boring just because the polar vortex is coming. There are so many beautiful, colorful and healthy veggies out there every season, look around you and grab those pumpkins while they’re still in season!
I love root vegetables and celery root is one of my favorites. People often forget about that not so pretty part of celery but it’s so good and versatile. It’s delicious in soups, great in salads and absolutely unforgettable fried or roasted. You can always find at least one in my fridge along with parsley root and carrots.
2 cups butternut squash, cut in ½ in cubes
2 cups celery root, cut in ½ in cubes
2 cups Brussels sprouts, halved
Handful of toasted walnuts
Handful of dried cranberries
2 tbsp olive oil
Couple of fresh sage leaves
Freshly ground black pepper
Heat 1 tbsp olive oil in a pan over high heat.
Add the celery root, pumpkin and sage to the hot pan and cook for 5 minutes stirring frequently until golden brown.
Lower the heat to medium, add a little bit of water just enough to barely cover the vegetables. Cover and cook covered for another 10 minutes.
In the meantime bring water to boil and cook the brussle sprouts for 5 minutes, drain and set aside.
Remove the lid of the pan with celery and pumpkin and add cooked Brussels sprouts. Season with salt and cook until all the liquid evaporates, for another 5-10 minutes.
Just before serving throw in toasted walnuts and dried cranberries, drizzle with the remaining olive oil and season generously with freshly ground black pepper.
