A Recipe for Fall Granola Stuffed Chai-Tea Slow Cooker Apples

This recipe is the combination of my love of fall, chai tea and using the slow cooker. Cooking the apples for 3 hours in apple cider-chai tea infuses the apples with amazing flavor while making them fall apart-fork tender. The perfect cure for a rainy day, these apples rival a traditional pie but will take you a fraction of the time. Stuffing the apples with granola, dried cherries and brown sugar act as the “crust” and make this dessert satisfying yet still leaves you with the feeling of eating light.   

Recipe:  4 Servings

 4 large gala apples (for a more tart dessert use Granny Smith)
2 C apple cider
2 chai tea bags
1 C granola
1/2 C steel cut oats
3/4 C dried cherries roughly chopped
1/4 C brown sugar
1/4 C coconut butter (melted)
1/2 orange (juice)
1 tsp cinnamon


1. In a large bowl combine granola, oats, cherries, cinnamon and sugar and mix thoroughly 

2. Add butter and orange juice, mix again and set aside

3. Core the apples and hollow slightly ( I used a grapefruit spoon but a melon baller would work great too)

4. Pack the apples with the granola mix and place them evenly in the slow cooker

5.Add apple cider and chia tea bags

6. Cook on low for 3 hours

7. Remove the apples with tongs carefully, they will be very tender

I served mine with vanilla frozen yogurt
